Ingredients
700g/1 1/2Ib potatoes, cut into 1cm cubes 1 tbsp oil 1 onion, chopped 1 red pepper, sliced 125ml/4 fl oz vegetable stock 250g/12 Savoy Cabbage, chopped 100g/4oz Cherry Tomatoes, quartered 4 tbsp flat leaf parsley, chopped
Cook the potatoes in boiling water for 5 minutes, drain thoroughly and put to one side. Meanwhile heat the oil in a large frying pan, add the onion and pepper and cook for 4 minutes. Add the diced potatoes and cook for 8 minutes until crisp and golden. Pour the stock into the pan, add the cabbage and tomatoes and cook for a further 5 minutes. Stir in the parsley and season well with salt & pepper. Serve immediately.
